Forward black cherry and black currant fruit aromas are wrapped in
notes of chocolate, cedar and hints Herbes de Provence. The
concentrated black fruit, chocolate and savory flavors are accented
by anise and black pepper that spice up the finish. These intense
yet elegant flavors are supported by young, yet approachable
tannins, and ample acidity, providing for a lengthy finish.
Winemaker Notes
Cabernet Sauvignon wines from the best Sonoma County red grape
s
ub-appellations provide the complex aromas and flavors
expressed in this blend. The characteristics of the hillside
vineyard sites used (warm days balanced by cool nights and
well-drained soils) make them ideal for producing ripe, rich
textured and structured Cabernet Sauvignon. Following fermentation
in stainless steel tanks, the wines were aged for 22 months in
small French, Hungarian, and American oak barrels. A small
percentage of Merlot was included in the final blend for added
richness and complexity.
Food Pairing
The elegant and full-bodied flavors of this wine make it an
ideal accompaniment to game, lamb, beef and pork dishes.
